Ingredients you need to make Matthy Matheson’s Naughty or Nice Chorizo Lasagna

One thing you’ll notice about the naughty or nice lasagna is that there are fewer ingredients, making it in our opinion, easier to cook. You have enough on your plate most date nights, no need to make it more complex than it already is. It also seems like the ingredients are a little bit more accessible to what we normally keep in our kitchen – or if your date night is at their place.

  • 1 tbsp canola oil
  • 2 lbs. fresh chorizo sausage meat
  • 1 1/2 cup tomato puree, divided
  • 2 cup beef stock
  • 2 cup ricotta
  • 1 cup queso fresco
  • 2 eggs
  • 1 cup grated parmesan
  • 1 tsp fresh ground pepper
  • 16-20 uncooked lasagna noodles
  • 2 cup grated mozzarella cheese

Ingredients for the salsa verde

This might be the secret weapon of this dish – especially for your next date night. You can add this salsa verde to any lasagna dish. If you’re taking a shortcut and ordering in or cooking one from frozen, this gives your lasagna a touch of sophistication.

  • 1 jalapeno, finely chopped
  • 1/2 chopped cilantro
  • 1/2 cup chopped mint
  • 1/4 cup green onion, finely chopped
  • 1 garlic clove, minced
  • zest and juice of 1 lime
  • 3/4 cup olive oil

Matty Matheson Lasagna review

We haven’t had a chance to make either lasagna yet, let alone both side by side to compare, but if we had to choose, which we do, we would pick the naughty or nice.

  1. Good chorizo is so underrated. You can get just about any flavour or spice you’d like. It’s also typically fairly cheap to source from most butcher shops
  2. Less is more. At least when it comes to ingredients and you don’t have a full pantry.
  3. The salsa verde is what takes it to a whole new level. If you’re using milder chorizo add a bit more jalapeno. Spicer chorizo? use the salsa verde to cool your mouth and balance it out.
